The Ceviche at SuViche

Ceviche is a seafood dish that has gained worldwide popularity. Ceviche is made from fresh raw fish marinated in citrus juices, lime or lemon and spiced with aji or chili peppers. Chopped onions and salt are added for flavor and there are many other additional seasonings added according to the kind of ceviche being prepared.

Sweet potato, lettuce, choclo corn and avocado usually accompany Peruvian ceviche; it is always prepared fresh right before it is to be served and eaten. 

The origins of ceviche include the western coast of north-central South America and Central America. The most specific origin is recognized to be from Peru. The invention of the dish is also attributed to other coastal cities such as the Polynesian islands and the Spanish people who brought citrus fruits from Europe.
