Chef Jaime Wins a Spot on the Top 50 Best Restaurants of Latin America

Published October 30th, 2019 by Sstahl

Congratulations to SuViche's Executive Chef, Jaime Pesaque, for winning a spot in this year's Top 50 Best Restaurants of Latin America. Recognized as a leader in the Peruvian food revolution, Pesaque has transformed traditional dishes into something extraordinary at his Lima-based restaurant, Mayta.

With thousands of restaurants to choose from spanning over Argentina, Belize, Bolivia, Brazil, Chile, Colombia, Costa Rica, Ecuador, El Salvador, French Guyana, Guatemala, Guyana, Honduras, Mexico, Nicaragua, Panama, Paraguay, Peru, Suriname, Uruguay, and Venezuela, Mayta won the 49th spot.  Meaning noble land in the native Aymara language, Mayta is Pesaque's personal interpretation of contemporary Peruvian cuisine. Using cutting-edge techniques, the freshest unique ingredients, and regional flavors, Jaime Pesaque adds a modern spin on local favorites, guaranteed to please any palate.

Situated in the affluent Miraflores district of Lima's Pacific coast, Mayta is the place to be seen with a young, fashionable crowd.  Making full use of Peru's plentiful bounty and coastal location, Pesaque cooks with flair (think foams, emulsions, and reductions) without forgetting the country's heritage. You will find ceviche, Peru's national dish is well represented, as well as signature favorites including Smoked Magret Duck with candied leg, foie gras, and fried egg served on a bed of risotto. Organic chocolate candy with smoked banana ice cream and nut foam provides a sweet finish to any meal. An award-winning pisco bar to boot, Mayta features a wide selection of the spirit from a variety of distilleries and an innovative range of cocktails.

Chef Jaime Pesaque has become a global ambassador of Peruvian food, opening restaurants in New York, Miami, Uruguay, and Hong Kong. A top graduate of Le Cordon Bleu culinary school and the Italian Culinary Institute for Foreigners, Pesaque spent many years in Europe, cutting his teeth in numerous Michelin-starred restaurants, and of course, right here in South Florida lending his expertise to SuViche.

If you find yourself traveling to Peru's capital, make your way to Mayta to see why it is among the Best 50 Restaurants in Latin America. You don't have to travel far though to experience Pesaque's creations at any of our six SuViche locations in Miami and Ft. Lauderdale.
